Pepper & Cheese Salad

Ingredients

2 cups low-fat creamy cottage cheese

2 tsp. lemon juice

1/4 cup Cherchies® Pretty Peppers , drained

1/2 cup pineapple chunks, drained and chopped

1/4 cup diced celery

4 Tbsp. chopped walnuts or pecans

●Combine lemon juice and cottage cheese in a blender until smooth. ●Stir in the next four ingredients. ●Place mixture on lettuce leaves and chill before serving.
