Mixed Bean Soup
Our Mixed Bean is another of our best selling soups. Several different beans, split pea and barley along with pasta and sundried tomatoes and a tasty seasoning packet make this a family favorite. And it's loaded with fiber. Makes approximately 9 (1 cup) servings.

What you will need:

10 Cups Water

4 Tbsp. Olive Oil

1 Garlic Clove, Crushed

1 Large Onion, Chopped



Preparation:

-Beans are harvested in their natural state. Even with the most careful processing, foreign substances such as small stones may appear. Please examine contents closely.

-Rinse beans thoroughly in cold water.

Put beans into a large pot, adding enough water to cover by 2 inches. Bring to a boil, cooking for 2 minutes. Remove from heat and let stand for 1 hour. Alternate method: soak beans in water overnight.

-Drain and rinse beans. To soup pot, add 10 cups water, contents of seasoning pack and beans, bringing it to a boil. Reduce heat, cover and simmer for 45 minutes.

-As beans are cooking, sauté garlic and onion in olive oil. After beans have cooked, add sautéed mixture, pasta and sundried tomatoes, bringing to a boil. Reduce heat, cover and simmer 20 minutes longer, stirring occasionally.

-If you choose to: Roll loose breakfast sausage into 1 inch balls. Brown and stir into soup.

-For the increasing number of consumers concerned about their sodium intake, we have reduced the salt in our seasoning packet. Please salt to taste.
