This delicious soup is not served at weddings as one would assume, but rather the name Wedding Soup is derived from the Italian words "minestra maritata", meaning the marriage of greens and meats. This classic Neapolitan soup is a delicious combination of greens, meats and pasta and is good enough to serve at a wedding. Makes approximately 8 (1 cup) servings.

What you will need:
4 Tbsp. Olive Oil
1 lb. Ground Meat to make 12 small (1 inch) meatballs (or pre-made frozen meatballs)
1 Medium Onion, Chopped
1 Garlic Clove, Crushed
8 Cups Water
Preparation:
-Beans are harvested in their natural state. Even with the most careful processing, foreign substances such as small stones may appear. Please examine contents closely.
-Brown meatballs using 2 Tbsp. olive oil in frying pan until cooked thoroughly. Remove meatballs. In same frying pan, sauté onion and garlic in 2 Tbsp. olive oil until onions are translucent.
-In a large soup pot, add 8 cups of water and contents of soup package, cooked meatballs and onion/garlic mixture. Bring to a boil, then cook on medium heat for 10 - 12 minutes, uncovered.
