Italian Minestrone Soup
Product Description
A rich blend of all natural freeze-dried vegetables, 100% organic semolina orzo and all natural mouth-watering seasonings makes this Italian mainstay a thick and substantial soup. Makes approximately 7 (1 cup) servings.

What you will need:
7 Cups Water
1 Cup Diced Onions
3 Tbsp. Olive Oil
1 Can (14.5 oz.) Diced Tomatoes
Parmesan Cheese
Preparation:
-Beans are harvested in their natural state. Even with the most careful processing, foreign substances such as small stones may appear. Please examine contents closely.
-Rinse beans thoroughly in cold water.
-Put beans into a large pot, adding enough water to cover by 2 inches. Bring to a boil, cooking for 2 minutes. Remove from heat, cover and let stand for 1 hour. Alternate method: soak beans overnight in water.
-Drain and rinse beans. To soup pot, add beans and 7 cups water and bring to a boil. Reduce heat. Cover and simmer for 45 minutes.
-While beans are cooking, sauté onions in olive oil until translucent. Set aside.
-After 45 minutes, add contents of seasoning packet, vegetable blend and orzo packet to beans. Add sautéed onions and can of diced tomatoes. Bring to a boil. Reduce heat to medium low. Cover and simmer an additional 15 minutes.
-Ladle hot soup into bowls and sprinkle with Parmesan cheese.
-If you choose to: For a spicier soup, use 1 can of diced tomatoes with green chiles.
